What are the consequences,if any, of over tightning your valve cover nuts?

Well I imagine you could ruin the valve cover gasket at the least, possibly snap the bolts. Why so?

Maybe the valve cover would leak oil, over tighting might break the seal....

I don't think you'll damage the seal as much as you will damage the studs that hold it down.

You would probably bend and possibly fracture the valve cover before you kill the studs. However, you might be limited by bottoming out on the nut first, I dunno. Why?

just wondering cause i just changed my valve cover gasket and i know your supposed to use 7pds. of torque for the nuts. I just tightened them with a ratchet.

hand tight is good enough.. it it leaks.. a little more.... till it doesn't :)
when you've used toooo much.... you'll know.
