When I hit the gas, my lights get brighter, battery light comes on, voltage meter goes to 18 volts, WTF?

Whoa.... if it's spiking to 18 volts the regulator is definitely shot.... it should never go above about 14.5 volts or so regardless of RPM. Replace that ASAP before you fry something important!

How could my wiring be bad?

Well if the alternator isn't recieving proper battery signal voltage, then it thinks the battery is low and needs to boost charging. Here's a simple test to try on the wiring....

1) Disconnect the alternator connector from the alternator. With the ignition switch on, there should be battery voltage between the IG (BLK/YEL) terminal and body ground, and between the S (WHT/GRN) terminal and body ground.

2) If there is no voltage, check for:
-Blown No. 1 (15 A) fuse in the dash fuse box
-An open in the BLK/YEL wire between the dash fuse box and the voltage regulator, or the WHT/GRN wire between the under-hood relay box and the voltage regulator.
