I know that can you tell if your thermostat has failed if it fails in the closed position by the overheating. etc. But if it has failed in the open position how can you tell? Are there any signs?

If it fails in the open position it will take forever to warm up.
If you are in doubt of it you should just replace it. Its a $5 part.

what temp it is when needle is 2/3 the way up?

it is hard to say what temperature the engine is at by the needle position. It is mostly there to give you a relative indication of how your engine is doing. My temperature gauge usually stays at a little below 1/2. 2/3 of the way up is a little hot. If you suspect your thermostat, it is a good idea to just replace it. Some thermostats have a safety feature allowing them to fail only in the open position. A thermostat stuck in the open position will cause your engine to warm up very slowly, it can also cause the engine temperature to vary based on the speed at which the car is moving (fast=cool down).

if was to take it out to inspect it, what should I look for?

Throw it in a pot of boiling H2o you will see it open at about 185 degrees if it doesn't its bad and check your sending unit.

Dude, if you're gonna take it out save yourself the time of having to replace it later on and just replace it.

Like it's been said before it's cheap, and make sure you get a new thermostat housing gasket as well.
