What exactly are coil-overs? What exactly do they do besides allow you to easily adjust your ride height and stiffen it up a bit? And what else do you need in addition to the actual coil-over assembly?

See the gold part on the bottom? You spin that around the cylinder to adjust the ride height.
The advantage to coilovers is adjustability. You can drop your car if you want to look cool, or fine tune your suspension. All coilovers have a stiffer spring rate than stock springs. If you get a set you will need new shocks as well, the standard shocks will give you a crappy ride with coilovers. if you do some searching in the Faq section there is a good list of coilovers and shocks that are available for them.
