The design differances are refering to how the clutch's send what you do with the pedal, to the clutch itself.
Cable means their is a cable that does the clutch actuation. Hydro means you are actually using fluid pressure to make the clutch work, no cable involved. The fluid is actually brake fluid, if that helps.

i don't think it is possible to convert hydro tranny to cable trany. i have never seen it.
