    120v plug

I know about the LM7805 to wire usb ports into the car, but is there an equivalent for 12 volt to 120 volt? Or do I have to build one?

You'll need a power inverter. You can mount it in your trunk like an amplifier, run it straight to the battery for the best power. A decent one that will run just about anything except a microwave will cost about $30-40. Then plug an extension cord into one end and strip the other end off and wire on your own receptacle and cut a hole somewhere like in your center console. That's what I did anyways.

I'm putting one under the passenger seat. I need to power 2 laptops and the occasional random other items. I figure that I want 800 watts of power is more than enough for my needs, but your needs are probably less.

I was able to run a desktop PC, laptop, and CRT off of a 400 watt peak inverter. 800 watts should do nicely.

Just hack off the lighter socket end and solder it to a 12v wire? Also, what's the easiest way to get the power to my dash 12v plug to shut off when I shut the car off? I hate having to unplug stuff so my car doesn't die overnight.

No, wire it off your battery and put a relay in line with a switch on your dash. Then you can flip the switch on and off to turn off the 120v setup.
