Will the crank from an 82 Ek1 fit an 81 ek? How about other parts? I know already gthat themanifold,heads,cam dont swap over but does the carb swap right through? Do the valve cover and crankcase swap over too?How about the oil filter?

Pretty sure the crank, rods & pistons will swap over; EL '81&'82 cranks & rods have same part numbers, though '82 EL pistons give higher compression than '81.
Carburetor, Distributor, Valve cover, oil pump & oil pan part numbers vary so they changed but that doesn't mean they might not fit...
Oil filter the same.
I put an '81 crank in the engine for my '82. It worked great. I believe the carb lost about a billion vacuum lines in '83. Or maybe it sprouted a bunch. I think they're different though.

The bolt pattern of the carbs were changed several times during the 1st and 2nd gen EL and EK engines, but i think they can swap with a little modification.

The bolts between flywheel & crank had changed from M10 to M12 late in 80 but didn't change again...
My engine is an has the m12 ones just for the reccord(81 EK)
